Ingredients

50ml Lyttelton Distillery Peninsula Gin

20ml Lyttelton Distillery Limoncello

10ml Sugar syrup

6-8 Mint leaves

Ginger ale

Crushed ice

2-3 Sprigs of mint to garnish

Slice of cucumber to garnish

 

Method

Build in the glass; combine all ingredients with a small amount of crushed ice in a highball glass, slapping the mint in your hand which expresses the oils in the leaf without destroying it. Swizzle with a stirrer or bar spoon and fill to the top with crushed ice, then top up with ginger ale.

Garnish with a mint sprigs and cucumber slice, enjoy!
