About LDC

We have created a name for ourselves distilling a gin that is unique to Banks Peninsula and is influenced by the traditions of gin making and reflects aspects of the contemporary. We will take the same approach as we bring additional styles of gin and other spirits to the market.

We take pride in being among the few New Zealand craft distilleries who make their own alcohol. We achieve our high-quality flavour by fermenting local grains, honey, kumara and other sources of fermentable sugars and then distilling the fermentation three times. We don't buy in whey alcohol from milk processors or industrial neutral spirit. Nor do we use preservatives or artificial essence when flavouring our gins and other products.

We flavour our gin by vapour infusion using juniper and a range of carefully chosen fresh and dried botanicals, all of which we source in New Zealand. Where possible we like to forage for some of what we need. We take frequent excursions to Central Otago to gather rosehips and wild thyme, and the mānuka comes from our backyard: Banks Peninsula.
